The vibrant yellow and green colours come from eggs and spinach which have been carefully kneaded into the dough. A method refined by generations of Italian nonnas to ensure colours and flavours are maintained even after cooking. The tagliatelle is bronze-cut to make the surface rough and rustic, so the sauce sticks better. More sauce and more flavour with every mouthful. What more could you possibly want.
